Can a person at Clarity read my emails?

Technically yes, for support and incident response — the team can access production data. That is true of every hosted email tool; the ones that don't say it have the same access. Stored content is encrypted at rest, which protects against a database being copied, not against authorised staff access.

If I delete an email in Gmail, does Clarity still have it?

Possibly, if Clarity had already processed and stored it. Deleting from Gmail does not propagate a deletion to Clarity's copy. To have stored content removed, contact support and ask — there is no self-serve delete-everything button today.

Is my email used to improve the product for other users?

No. Embeddings and learned writing style are scoped to your account and used to serve you. There is no model training pipeline, and nothing derived from your mail is pooled across accounts.
